Pork dish is a Spring Festival dish on our dinner table. Compared to boiled dumplings, we like the crunchy bottom. One of my favorite serving methods is to match it with a delicious, spicy dipping sauce.
In addition to the pork, cabbage, and carrot filling, you can also choose to make a pork and chive filling.

What is pottery?
Cooking sticks are also known as Gotti In China. They are crescent-shaped Chinese dumplings filled with minced meat, vegetables and aromatic flavorings. Pork and ginger are a popular combination and you can expect to find vegetables like scallions, carrots, and cabbage inside. Condiments include soy sauce, hoisin sauce, and oyster sauce.
What distinguishes them from other dumplings including boiled dumplings or steamed dumplings is that they are Fried and crispy On one side.
Here are some reasons why I love pot stickers:
- texture: There’s nothing like biting into a smooth bowl and hearing the crunch of the fried bottom. It’s the perfect combination.
- filling: The filling is usually always juicy and delicious. In this case, we have tender pork with chopped vegetables and seasonings like soy sauce, oyster sauce, ginger, and sesame oil.
- It’s easy to make at home: The number of ingredients in this recipe may intimidate you. But I promise it’s easy to make, and besides the pork and vegetables, I bet you have plenty of them in your kitchen already.


Step by step instructions
Preparing cabbage
In a separate bowl, add the chopped cabbage and mix with 2 teaspoons of salt. Place the chopped cabbage in a bowl filled with water, then lift a handful of it and squeeze it to get rid of the water. Add these handfuls directly to the pork mixture.


Preparing the filling
You can choose to cut the pork by hand or use ground pork. Transfer the pork filling to a larger bowl so we can mix it quickly.
Make scallion and ginger water
In a separate mixing bowl, add the white scallions and ginger, plus 4 tablespoons of warm water. Blend quickly before you leave that rest.


Add water to the filling
Add 2 tablespoons of water to the pork and mix until the pork completely absorbs the water. Repeat this process twice. This step can make the filling soft and smooth after it is cooked.
Season the filling
Once mixed, add salt, ground white pepper, light soy sauce, oyster sauce, sesame oil, and eggs to the bowl. Mix the ingredients until combined and the pork filling becomes sticky.




Add the chopped green onions (scallions) and boiling oil to the mixing bowl next. We can greatly enhance the flavor with this step, making the aroma blend well with the pork filling.


Mix vegetables, carrots and cabbage.


Collect pot stickers
Assemble the pork pieces one by one and place them in a non-stick frying pan. You can shape it into any shape you want. For detailed instructions on how to fold dumplings, check out these instructions where I’ve included ten ways to fold dumplings and utensil labels.
Frying a pan
Add about 2 tablespoons of cooking oil to a nonstick pan, swirl it, and place the pan sticks one by one.


Start with medium heat and let the pork pieces rest for a while. You can stir it around to get even heat.
Add hot water along the edges of the pan, so that the top of the pan can be steamed with the lid covered.


Reheat the pot without the lid until the bottom of the pot is hard and crispy again.


Premium hot dipping sauce
We usually pair the crock pot with a great dipping sauce, either a vinegar with ginger sauce or a chili sauce.
Now, let’s make a super easy, delicious, aromatic and spicy dipping sauce.
In a small bowl, add the red pepper flakes, toasted sesame seeds, garlic, ginger, and chopped green onions.


Pour in about 2 tablespoons of hot, smoked oil. Then add light soy sauce, oyster sauce and black vinegar. Mix well. This is our dipping sauce

- 1 Ginger thumb
- 3 White green onions
- 4 Tablespoon. warm water
- 2 Tablespoon. Light soy sauce
- 1 small spoon. Oyster sauce

- 1 an egg
- 1 Tablespoon. Sesame oil
- ¼ cup Chopped green onions
Dipping sauce ingredients
- 1 Tablespoon. Red pepper flakes
- 3 clove garlic
- 1 Tablespoon. Sesame oil
- 1 Tablespoon. Chopped green onions
- 2 Tablespoon. Hot boiling oil
- 1 small spoon. Oyster sauce
- 1 small spoon. Black vinegar
- 1 Tablespoon. Light soy sauce
- 1 Tablespoon. water

Repeat this process, but instead, I recommend using your gloved hand to mix the water and pork together.

Once mixed, add salt, ground white pepper, light soy sauce, oyster sauce, sesame oil, and eggs to the bowl. Mix the ingredients together until combined.

Add the chopped green onions (green onions) and boiling hot oil to the next mixing bowl.

Add the chopped carrot and mix the cabbage with the pork.
Assemble the poster

Place a tablespoon of the crock pot mixture in the middle of the dumpling wrapper.

Dip your finger in water and rub it along one edge. Press the wet and non-wet sides together to seal the dumplings. Watch the video to see how I make the folded edges.
Fry the pork pot

Add your pot stickers to an oiled pan in a single layer.

Once the crock pots turn golden brown on one side (usually only takes 2 to 3 minutes), add ¼ cup of water to the pan and place the lid on top to steam them for another 3 to 4 minutes.

When the dumpling wrapper is hard and crispy again, you can remove the bowl stickers from the pan.
Prepare the dipping sauce.

To prepare the dipping sauce, place the first 5 dry ingredients (chili flakes, sesame seeds, garlic, ginger, and scallions) in a bowl and mix together.

Pour hot smoked oil on top. Then add the remaining four ingredients and mix them together again. Dip your pork bowl into the dipping sauce and enjoy!

Are the pottery fried or steamed?
The cookware is fried and steamed. It’s a technique called “Steam frying“.
If you are making clay sticks with fresh ones, simply pan fry them until the bottom is crispy and golden. Then we add some hot water and cover the lid to steam the rest of the pots – this is a type of steaming.
Recipe notes
- In the United States, dumpling wrappers are found in the refrigerated section of Asian supermarkets. As mentioned earlier, they are the same as gyoza, so you can use gyoza wrappers instead. Otherwise, make Fresh dumpling wrappers at home.
- Once you add water to the pan, it will spit at you. So have the cover ready to put in your other hand.
- Other common vegetables that can be added to cooking sticks include chopped celery and chopped shiitake mushrooms.
- Besides oyster sauce, you can use teriyaki sauce or hoisin sauce in the filling for the bowl.
- If you don’t want to make the dipping sauce at home, you can just serve the sticks with soy sauce if you like. This is what usually accompanies them in Chinese restaurants.
What’s the difference between crockery, dumplings and wontons?
Crockpots, dumplings and wontons are popular Chinese street food options. I already have it Comprehensive guide To the differences. But here’s the bottom line: Crockpot dumplings are a type of dumpling. They involve a thicker wrapper with folded edges, while wontons use a thinner wrapper. Wontons are usually square or round and the filling does not include vegetables, only meat and spices.
As for the cooking method, the wontons are boiled and fried, while the dumplings are pan-fried and then steamed. Wontons are also commonly served in soup or noodles, while you’ll find pancakes and dumplings served alone with a dipping sauce.
Can you freeze those stickers?
Yes, you can freeze cooked and uncooked dumplings. I recommend freezing them uncooked because they will last longer (3 months compared to 4 weeks for cooked dumplings). Freeze them on a lined baking sheet in a single layer, otherwise they will stick together. After several hours, you can place the frozen dumplings in a freezer-safe container or ziplock bag.
