Puto cheese Soft, fluffy and so delicious with cheese pockets! These Filipino steamed buns are easy to make and fun to eat. They are delicious on their own or served with dinuguan or pancit.

Puttu is traditionally made from rice. The grains are soaked overnight in water until soft, then processed into a soft paste called galabong. The natural leavening resulting from soaking the rice acts as a leavening agent, but it is common to add yeast or baking powder to help the cake rise.
The prepared mixture is steamed as whole loaves or into individual portions, and the steaming bowl is usually covered with banana leaves to add aroma. Flavors and toppings such as pandan water, cheese, salted egg, shredded coconut meat and butter are added for more flavor and texture.
While puto is primarily associated with buns here, it also refers to other steamed kakanen varieties, such as lanson, kutsinta, and puto maya.

I always make puto with rice flour, and it’s delicious, but when I found this cheesy puttu recipe, I couldn’t wait to try it! Soft, moist and fluffy with delicious pockets of cheese, these steamed buns were definitely worth the excitement.
- Mixture– Made with all-purpose flour, evaporated milk, eggs, butter, sugar, baking powder and vanilla. It’s a great basic recipe that can be modified to create other flavours; Feel free to try pandan or ube extracts!
- cheese-I like to add grated cheddar cheese to the mixture to create pockets of cream cheese. You can skip this if you like and sprinkle it on top. Besides cheddar cheese, you can also use sliced salted eggs, xung puti, processed cheese (eden), and even crispy cooked ham or bacon to add delicious flavor to the rice cakes.
Required Equipment
- Steamship– It is preferable to have a cone-shaped lid to prevent condensed steam from dripping on the puttu.
- Katsa (muslin) or light cotton– Cover the lid to absorb condensation steam
- Individual templates-You can use tin cans and shells, but I prefer mini silicone muffin cups because they make removing the steamed bun easier. This recipe makes about 40 using mini molds and about 20 regular-sized ones.
Cheese Puttu Instructions


- Place the flour, sugar, and baking powder in a large bowl, and stir well. Add the eggs one at a time and beat well using an electric mixer after each addition.
- Add the milk and whisk until smooth. Add water and continue whisking until the mixture becomes fluffy and smooth.
- Add butter and vanilla extract. Stir until well combined. Add the grated cheese and stir until the ingredients are mixed.
- Fill the molds with dough up to ¾ full. Arrange the molds in a single layer on the steamer rack and place them on top of it.
- Steam for 8 to 10 minutes or until toothpick comes out clean.
- Turn off the heat, then top each piece of cheese with slices of cheese, and cover to allow the remaining heat to melt the cheese.
Quick information
If you prefer a crackly surface, steam the puttu over high heat. For a soft dome, steam over low heat.

Leave it to cool a little before removing it from the molds.
