I love fried rice because it’s a great way to deal with leftover rice. Shredded pork belly delivers crunchy bits of flavorful meat, while fresh peppers and scallions add color and crunch. Every bite is full of delicious aromatic taste.

As a pork belly lover, I look for new ways to make pork belly, turn it into something delicious, or combine it with other ingredients.

Pork belly has beautiful names in Chinese: 五花肉, 三线肉, or marble meat. It comes from pork stomach and has three layers, two of which are lean meat and three of which are fatty meat. So it has a great ratio of lean meat to fatty meat.

With crispy pork belly cubes, it’s a little different

It’s different from classic fried rice because I include crispy pork belly.

I use green peppers in this recipe. You can replace it with other vegetables like broccoli, mustard greens, and even bok choy. Adding greens not only makes the color more attractive but also helps balance the oily taste.

Cook Tips

  • Remove excess oil When the pork belly is cured and a lot of oil is released.
  • If you want a darker version, add 2 teaspoons dark soy sauce.
  • Use old rice: Using rice that has been refrigerated overnight helps achieve the best texture of fried rice. The two best options are long-grain jasmine rice or basmati rice.
  • Cut the pork belly into small pieces: Cut the pork into small 1/2-inch cubes until crispy and evenly mixed with the rice.
  • Keep moving in the pan: Constant tossing and stirring helps maintain consistency and prevent burning.

  • Pork belly – Pork belly provides tender, fatty meat that fries crispy and imparts a rich, delicious flavor to the rice. Choose well-marbled fillets with a good balance of fat and lean meat.
  • Pepper Or a little hot pepper – fresh and crunchy peppers add color, texture and a slight sweetness to balance out the pork belly.
  • Eggs – Eggs help add a beautiful green color and enhance the flavors. But you can make it without an egg too.
  • green onion Green onions add a fresh, bright onion flavour. I separated the green onions into a white part and a green part. The white part is fried with garlic while the green part is used as a garnish at the end.
  • Cooked rice – Chilled one-day-old rice fried light and fluffy. Jasmine or basmati rice works best.
  • I am willow – Soy sauce adds umami in addition to the classic Chinese food flavor. I mix in a small amount of dark soy sauce to keep it a bit coloured. But this is not as dark as soy sauce fried rice.
  • Sesame oil -A touch of sesame oil provides depth and a nutty aroma.
  • Salt and white pepper – Spices improve the overall flavor of the dish.

Step by step instructions

Step 1: Prepare the ingredients, cut the pork belly, and green pepper. Beat the egg with a little salt and pepper.

Step 2: Sear the pork belly.

Add a small amount of oil, then place the pork belly in it. This process may take several minutes. Be patient, because we want to make the pork belly crispy and less greasy.
Step 3: Cook the egg

Once the pork belly is evenly browned, move it to one half of the pan and place the egg in it. Use the stirrer to crack the eggs. Then add green onions and ginger and fry until fragrant.

Step 4: Add rice

Break up any large clumps with your spoon or spatula. Stir and stir for two minutes, then leave the rice until heated through.

Step 5: Seasoning

Add light soy sauce, dark soy sauce, sesame oil, salt and white pepper. Stir well and serve hot. Now we get this fragrant, crunchy, pork-filled fried rice. If you want to try something new, this is a must.

ingredients

  • 1 cup Pork belly cut into cubes
  • 2 Fresh green hot pepper cubes
  • 3 green onion Cut and separated into white and green parts
  • ½ Thumbs up ginger Shred it
  • 4 Glasses Cooked rice Preferably leftover jasmine rice
  • 1 Tablespoon Cooking oil
  • 1 Tablespoon I am willow
  • 1 small spoon. Dark soy sauce
  • 1 small spoon Sesame oil
  • ½ small spoon salt
  • White pepper as desired

directions

  • Cooking pork belly: hHeat 1 tablespoon of oil in a frying pan or large frying pan over medium-high heat. Add the pork belly cubes. Fry the pork belly for 2-3 minutes, stirring frequently, until lightly browned and well browned. Remove excess oil and transfer the pork belly to half of the pan.

  • Add the beaten egg. Crack the eggs. Add the minced garlic and the white parts of the green onions. Cook for 30 seconds until fragrant.

  • Then add the diced peppers for about 30 seconds.

  • Add the cooled cooked rice. Break up any large clumps with your spoon or spatula. Stir and stir for two minutes, then leave the rice until heated through.

  • Add the green onions (green part), soy sauce, sesame oil, salt and white pepper. Stir well and serve hot.

What do you serve with it?

Even if we pour out the excess oil from the pork belly, it will still have oil content. Therefore, we recommend serving it with pickles or salad.

I usually like to pair it with a nice cucumber salad and match it with a lovely chili oil.

Can I use fresh cooked rice?

It is best to use old rice that has been refrigerated overnight. Starches crystallize, which prevents them from softening. Freshly cooked rice runs the risk of becoming soggy in the pan.

Do I need to marinate the pork belly first?

No, there is no need to season the pork belly.

Can I use brown rice instead of white?

You can, but brown rice tends to be drier. Make sure to use very soft brown rice and add more oil when cooking to prevent drying. White jasmine rice or basmati rice is still recommended for the best texture.
