This pocket pie recipe is a homemade adaptation of Jollibee’s tuna pie, with slices of white bread replacing the pastry crust. It’s a crunchy hand pie with a cheesy tuna filling and a crusty breadcrumb topping.

- Slices of white bread-You can use white or whole wheat bread for extra nutrition.
- Canned tunaThe recipe uses light tuna fillets in oil, but feel free to substitute white albacore. You can skip the tuna filling and try this chicken salad sandwich.
- Red onion– Add color and texture. You can also add grated carrots, sweet pickles, or green peas to the tuna filling.

- cheese- I like to use the Eden brand, but any processed stuffed cheese or instant cheese is a good choice
- Milk and eggs-Whisk together until foamy; The bread crumbs help cover the pancakes
- Bread crumbs-Use Japanese style panko bread crumbs for the best crunch
- oilUse a neutral-flavored oil with high smoke points, such as canola, safflower, avocado, or grapeseed oil.
Crispy tuna pie in easy steps


- Combine tuna, mayonnaise, onion, salt and pepper in a bowl. Cut the quick-melting cheese into slices and leave it aside.
- Trim the edges of the bread slices and flatten them until very thin using a rolling pin.
- Place a spoonful of the tuna filling on the bottom of the bread and place a slice of cheese on top.
- Fold the top half of the bread over the filling. Using tines of fork, press edges to seal completely.
- Whisk the eggs and milk in a bowl until well combined. Dip the bread pocket briefly in the egg mixture, then roll in the crumbs, patting it completely to cover.
- Carefully add the baked patties in a single layer to about two inches of hot oil and deep fry until crispy and golden. Remove from pan and drain on a wire rack.

- Drain canned tuna well to prevent too wet filling from tearing the bread. Stir the salad ingredients together when ready to assemble to prevent the filling from becoming too watery.
- Dip the pancakes in the milk and egg mixture very briefly so that the moisture does not make the bread soggy.

- 4 ounce Fast melting cheese
- 8 to cut Slices of white bread
- 2 egg
- ½ cup Milk
- 1 cup Bread crumbs
