An easy way to fry spinach with garlic. It’s a delicious Chinese-style dark leaf vegetable stir-fry that only takes 5 minutes.
You may find many recipes that call for boiling spinach before stir-frying. We are used to bleaching it for several reasons.
- The first purpose is to keep green. But since spinach can be fried in a very short time, it is not necessary to eat this dark green leafy spinach.
- Remove bitter taste. In some seasons, spinach may have a bitter taste.
- To remove oxalic acid: This is a traditional saying that the oxalic acid in spinach is unhealthy. But in reality, the oxalic acid present in a regular amount of spinach has little effect on the health of the body.

How to wash spinach
Spinach can be gritty if not washed properly. So we need to wash it carefully. Take a large bowl of water and wash the stem separately. Then remove the red hair. Drain well and cut into small pieces about 5 cm long.
Stir in spinach
Add the oil to the pan, and when the oil is hot, add the chopped garlic, and stir for just a few seconds over low heat until it smells fragrant. Do not fry garlic for too long as it may burn and become bitter.
Quickly add the spinach and add salt and light soy sauce when the spinach is almost tender. Move quickly. The whole process should take less than a minute, and do not overcook the spinach. Serve hot.

If you are preparing a large meal with other dishes, please saute the last dish of orange spinach. Because it turns dark and loses its freshness very quickly.
